Nutty Ice Cream Mini Pies (Paleo & Vegan)

Hello warm weather! Who else gets excited this time of the year? It's one of my favorite seasons, that's a fact! I love seeing all the trees and flowers bloom... such a pure and beautiful season!

As I was enjoying my vacations doing what I love, which is cooking and sharing the recipes, I came up with this idea. Easy peasy and the perfect mini treat for the warm spring days and the summer ahead... specially if you live in a city near, or in fact, in the desert.

The idea was to create usual pies using some of the ingredients that I had in stock, but these came up even better than I was expecting! The name came up because these are CREAMY AS ICE CREAM! but not that melty, so you can still enjoy these a a couple (10-15 minutes to be exact) minutes out of the freezer before the start melting.

These need to be stored in the freezer, just like ice cream, and the taste? Well, incredible and so indulgent!

Toppings and nuts are key to this recipe! Choose your favorite bar and nuts! In this case I used some Freedom Bars, paleo, whole 30 and with AIP friendly options! In this recipe I used the Cinnamon Raisin Bars. And for the nuts pili nuts and almonds! The perfect and silly combination.

Pro tip: BUT RAW SEEDS! Since the roasting process can affect some of the nutritional content. The thing about this recipe is that it's raw! No heat is needed so you can be sure that the micronutrients are safe and sound!

Another important thing about this recipe is the mix. The base is vegan protein powder, if you still haven't tried using vegan protein powder in your sweet treats you are missing out! A game changer and a great method to keep them low carb. Nutty Ice Cream Mini Pies

Serves 12

Ingredients

- 3 scoops (75 gr or 3/4 cup) of vegan Nuzest protein powder (PURELYHL for 15% off)

- 1/2 cup (60g) of raw almond

- 1 cup (90g) of raw pili nuts

- 1 1/4 of water or almond milk

- 1 tsp of cinnamon

- 1/3 cup of monk fruit

- 4 of your favorite bars

Method

1. In a mixing bowl add the protein powder, cinnamon and monk fruit.

2. Add the liquid and mix until you get a smooth consistency.

3. Add the nuts and mix again.

4. Pour the mix in 12 silicone muffin cups.

5. Chop your bars and top your muffins with them

6. Freeze for 3-4 hours. ENJOY!
