Avocado Almond Joy Tarts (Paleo)


Yesterday was my mom's birthday and I really wanted to give her something special, almond joys are her favorite candy and coconuts it's a must on her everyday menu. It didn't took me a lot of time to come with different recipe options to make her on her special day, and I was feeling like having some fun in the kitchen and test some ingredients.


I wanted something dairy free but creamy and what a best ingredient other than avocados to make this happen! Besides, who doesn't love avocados? They are packed with essential minerals such as magnesium, potassium, vitamin K, vitamin E among other goodies. Don't forget to add those micro nutrients into your diet! They are essential for chemical reactions in our body.



Anyways, back to the recipe! These are great as a little treat for birthdays, and you can freeze them and enjoy them whenever you like. Ingredients are simple, nothing complicated and you can replace coconut sugar with monk fruit if you want them low carb.


I'm grateful to have a mother like her so I want to give her the best I can, healthy and delicious are a must! nothing bad in here, and she and her friends are fan of my kitchen experiments so that's a win! It makes me so happy to see them enjoy and hearing them ask for recipes!



Enjoy this AVOCADO ALMOND JOY TART because they were incredible!


INREDIENTS (Makes 6 mini pies)


CRUST:

  • 1/2 cup of coconut flour

  • 2 tbsp of coconut oil

  • 1 tbsp of coconut sugar or monk fruit

  • 1 eggs

FILLING

  • 2 medium avocados

  • 1/2 cup of coconut sugar or monk fruit

  • 3 tbsp of cacao powder

  • 1 tsp of cinnamon

  • 1/2 cup of coconut milk

  • 1/3 cup of shredded coconut

  • 1/4 cup of almond

METHOD

  1. Preheat the oven at 350F. And mix all the crust ingredients. Divide the dough in 6 mini pie molds. And bake for 15 minutes.

  2. In a food processor or blender mix all the ingredients except for the almonds and shredded coconut.

  3. Add the shredded coconut and mix with a spoon.

  4. Divide the filling mix in the mini pie molds and top with some almonds.

  5. Let them sit in the fridge for an hour.

  6. ENJOY!
