Birthday Cookie Cups (Paleo & Low Carb)


The thing is that there's always somebody's birthday, so if you are looking for the perfect excuse to have yourself something delicious with a birthday theme, this is the only excuse you need. Plus, when it comes to dates and holidays you know I don't play by the rules!


Birthday cake is an all year round celebration! So grab your ingredients and let's begin with this Birthday Cookie Cups because these cookies are going to rock your day, week, tastebuds, world... all of the jazz!


If I'm being honest the main idea of this recipe has something different, I was planning on doing some blondies. Well, that didn't happened. That's the thing when it comes to recipe testing, you have an idea on your mind and it turns up being a different one.


I think that this also happens on our daily basis, we set ourselves expectations and then the unexpected happens. At the end we have to accept what life is throwing at us and rock the heck out of it. In this case, cookie cups? Instead of blondies? I dig it! Thanks life!

Let me describe how good is this recipe. The texture is crumbly but soft. Not as hard. Buttery from the nut butter. In here I incorporated an extra love for the gut by using Vanilla Multi Collagen and Glutamine. These both contain amino acids that are essential for a healthier gut barrier.


We are not using the main inflammatory ingredients:

- No Gluten

- No Lactose

- No Sugars

Instead we are using coconut flour, almond butter and monk fruit. You can get a discount code for the monk fruit and more of Lakanto's products if you use the code PURELYHL so go nuts and stock up on my staples.


This recipe is:

- Paleo

- High Fiber

- Gluten Free


These can be stored in the freezer for up to a week (that's what they lasted in my house), but they would probably would last longer.


For toppings I use a keto friendly birthday cake protein bar but feel free to use your favorite kind! I also love Heka Good Foods Bars, this is completely up to you! This recipe, for base has coconut flour, this creates more volume and adds more fiber to the recipe. Each serving has 5.6 g of fiber!

Birthday Cookie Cups

Serves 12

Ingredients

- 1 cup of coconut flour

- 1/3 cup of monk fruit ("PURELYHL" for discount)

- 1 tsp cinnamon

- 1 tsp baking powder

- 1/3 cup of water or nut milk

- 3 keto bars such as Heka Good Foods (purelyhealthyliving for discount)

Method

1. Preheat the oven at 350F.

2. Mix al dry ingredients except for the bars (those are to top each cookie)

3. Add the wet ingredients and mix well.

4. Pour the mix into twelve muffin cups.

5. Top with chopped bars and bake for 18 minutes.

Carbs: 12.3g

Fiber: 4.8g

Protein: 9.7g
