Coffee Tahini Protein Creme Brûlée

Serves 1
Ingredients
Coffee
16g of @lifeboostcoffee decaf medium
2 cups of hot water
Creme Brûlée
3 tbsp of heavy cream
2 yolks
1/3 cup of prepared coffee
1/4 cup of granulated monk fruit
1 tsp of vanilla extract
1 tbsp of tahini
3 tbsp of vanilla protein powder
Toppings
1/4 cup of brown granulated monk fruit
2 sliced fresh apricots
Instructions
Preheat the oven at 350F.
Whisk the eggs with granulated monk fruit and vanilla.
Add in the protein powder, heavy cream, tahini, coffee and mix well, until fully creamy and no lumps are left.
Pour into small ramekin bowls.
Bake in water bath for 30 minutes.
Let it cool down completely.
Top with brown granulated monk fruit and roast with a kitchen torch.
Crack and enjoy!
