Crispy Jalapeño Lime Peach Salmon Tacos

Serves 4


Ingredients

Salmon  

  • 4 wild-caught salmon fillets, skin removed

  • ½ teaspoon garlic powder

  • ⅛ teaspoon black pepper

  • 1 teaspoon sea salt

  • ½ cup unflavored whey protein or flour

  • ½ cup egg whites

  • ½ cup Sourdough Panko breadcrumbs

Ginger Cilantro Slaw  

  • 1 cup shredded cabbage

  • ¼ cup chopped cilantro

  • 1 tablespoon granulated monk fruit

  • Juice of 1 lime

  • 1 teaspoon powdered ginger

  • ½ teaspoon garlic powder

  • ¼ teaspoon sea salt

  • ½ cup Greek yogurt (whole milk)

For Serving  

  • Tortillas

  • Lime

  • Dried Green Onion Flakes

  • Red Pepper Flakes

  • Pepper Exchange Jalapeño Lime Peach Sauce


Instructions

  1. Carefully peel the salmon skin and cut into bite-sized cubes.

  2. Set up three bowls: one with whey protein, another with egg whites, and a third with panko breadcrumbs.

  3. Dip each salmon cube into the whey protein, then egg whites, and finally coat with panko.

  4. Air fry the coated salmon at 355°F for 20 minutes, shaking halfway through.

  5. Prepare the slaw by mixing shredded cabbage, cilantro, lime juice, monk fruit, ginger, garlic powder, sea salt, and Greek yogurt. Let it sit for 30 minutes.

  6. Assemble the tacos: place crispy salmon on tortillas, top with slaw, drizzle with Pepper Exchange Jalapeño Lime Peach Sauce, and garnish with green onion flakes and red pepper flakes.
