Keto Chilaquiles Verdes (Gluten Free)

Chilaquiles might be one of my favorite Mexican dishes ever! It's something about the comfort of the sauce soking those tortillas and paired with some good sunny side eggs, once you pop the yolk it creates a Mexican masterpiece of flavors!


I have been all about easy and simply meals lately; the Mexican inspo is just part of my blood so in today's recipe I'm sharing these amazing and delicious chilaquiles using some pork rinds, another food that has been on repeat lately!



For breakfast or not this is a great recipe to enjoy at any time! I paired these chilaquiles with some eggs but you can also have these with chicken, beef, carne al pastor... well, the ideas are always endless!



Like any other traditional Mexican food, these chilaquiles are paired with a good salsa, green is my favorite choice, and it makes the pork rinds softer, these are also called Chicharrón en Salsa Verde. A kind of stew that it's also used for burritos actually!



This is a great low carb, keto and paleo friendly meal, for a paleo version just make sure to skip the cheese, or you can use a dairy free alternative. It's still going to be so legit anyways, I think that the key here is in the sauce and the protein of choice as the topping.

  • Pork Rinds

  • Green Salsa

  • Real Salt

  • Black pepper



Corn tortillas are the ones that are typically used for this recipe, still gluten free but I wanted to share this keto friendly recipe for all my Mexican food lovers out there, plus, personally I'm a huge fan of pork rinds.

Have fun with the toppings! I added some pico de gallo as garish and extra flavor, but you can also include some sour cream, or as I added here, cheese too!

The end result

Such a comfort food! The flavor of the green salsa along with those pork rinds is just amazing, so satisfying too thanks to all the protein. I think that eggs are just the greatest way to top this recipe since the yolk also adds a special taste!

Keto Chilaquiles Verdes

Serves 2-4


Ingredients

  • 2 cups of pork rinds

  • 1 cup of green salsa

  • 1/2 cup of shredded cheese

  • 4 eggs

  • Real Salt to taste

  • Black pepper to taste

Method

  1. Preheat the oven at 350F.

  2. Cut the tortillas into pieces and place them in a baking mat, sprinkle some salt.

  3. Bake for 12-15 minutes.

  4. Place them separately in a plate.

  5. Prepare the jicama slaw by mixing the jicama, red cabbage, mayonnaise, salt, pepper and set aside.

  6. Top the tortillas with pulled pork and drizzle some queso.

  7. Add the jicama slaw on the side and enjoy!
