Food is more than energy. Food is medicine, food is joy and our door to live a healthy long life. I love cooking with functional foods in all sorts of varieties, for example a very common spice; ginger, this root is that was considered as a luxury many years back and it was used by ancient medicine practitioners, it's commonly used in Asian dishes giving them a delicious taste.
Ginger has a powerful medicinal property, its a powerful foods that acts with an anti-inflammatory, great antioxidant, anti fungal and a lot more! It's a source of magnesium, potassium, phosphorus, calcium, folate, zinc and vitamins E, B (1,2,3,6). It also had shown to reduce chances of strokes because of its capability of anti-blood clotting. Ginger adds a special flavor to this bites and makes them so seasonal! Kind of gingerbread but in bites. Also in other note, with this semester being over and me having plenty of time to experiment in the kitchen I'm in action to create new recipes using healthy ingredients and with functional ingredients because as I said before, FOOD IS MEDICINE.
This bites have a secret ingredient, MAYONNAISE! Yes sounds super twisted and weird but trust me, you wouldn't tell it has it! Probably the mixture fades away the taste but it adds:
-Soft Texture even when it's frozen
- Good source of fats if you are using Avocado oil
The recipe is simple but you can substitute the Tbsp of mayonnaise for nut butter if you don't trust me or mayonnaise is just not your thing. But as they go to the freezer, the mayonnaise doesn't let the balls be hard as rocks so this makes have the perfect consistency to eat at any time.
INGREDIENTS (11 balls)
- 1 cup of acorn squash pureed (122gr) or pumpkin pureed
- 3/4 cup of coconut flour
- 1 Tbsp of avocado oil mayonaisse (can substitute for nut butter)
- 1 Tbsp almond milk
- 1tsp of ginger
- 1/4 tsp of cinammon
- 20 drops of organic stevia
Make sure your acorn squash is pureed, add all the dry ingredients and make sure to get a nice consistent batter, then all the mayonnaise and make sure to have a good homogeneous mix. Form into balls and freeze.
