To flax or not to flax? I choose to flax!
Flaxseed it’s a great source of omega 3, higher, protein and high in antioxidants! Studies have also shown that the lignans have antitumorigenic effects and to lower cholesterol. Also I have been trying seed cycling lately so flaxseed because of its lignans it's great of women hormonal health! I'm in my second week and already noticing some changes, so I can't wait to keep going and see all the results!
I thought that the flax factor will be not that appealing to her taste buds.. but guys, it was a winner! Hope you like them!Anyways, this recipe was delicious! I was surprised when my mom asked for the recipe!
Blueberry Flaxseed Muffins
1 cup (2 packet) of Wildway Bluberry Cereal (can replace with 1 cup of almond flour or 1/2 cup of grounded flax + 1/2 cup of almond flour)
1 cup of almond flour
1/2 cup of coconut flour
1/2 cup of coconut sugar or monk fruit
1/4 tsp of sea salt
1 tsp of cinnamon
2 tsp of baking powder
1/2 cup of almond milk
2 bars of choice (for topping)
Preheat the oven at 325F.
Mix all the dry ingredients in a big bowl, then add the rest of the ingredients (expect for the bars).
Pour the mix in 12 muffin molds and top it with a piece of the bar you picked.
Baked for 20 minutes.
