Avocado Chocolate Peppermint Fudge

Hello my friends! Who else is on "Preparing Treats Mode On"? I know I am! And one of my favorite seasonal flavors is chocolate mint. It's so refreshing and the combination of chocolate just makes the perfect match.

 

I am a huge fan of visiting local shops and I love seeing all the peppermint spice lattes and of course the different types of peppermint tea, my favorite! A friend, who's fan of mint flavor was surprised by the idea of these Avocado Chocolate Peppermint Fudge recipe, specially because they involve avocado as the base of the recipe. I know it may sound crazy but you would never tell there's avocado in there, trust me!

 

 

 

I'm excited to share this recipe since it's the time for sharing and giving all the love, treats, hugs and memories. These will be perfect as a snack, treat, the options are endless. But I must warn you that these are col treats so you may require some fuzzy socks while you enjoy these bad boys.

 

Why did I choose avocado as a base? Just because it's creamy and it's packed with so many things such as vitamin E, potassium, folate, copper, vitamin K, tons of fiber and essential fatty acids.

 

 

 

Because these are avocado based these are a low carb treat, and if you have been following me for a while you know that I love keeping my treats low carb and making them healthy without skipping all the good flavor.

 

The recipe is so easy to make, you'll only need:

- A blender

- Silicone muffin cups

 

INGREDIENTS (12 serving)

 

- 2  (300g) big pitted and skinless avocados

- 1 1/2 cup of almond milk

- 3 Tbsp of raw cacao powder

- 5 drops of peppermint essential oil

- 1/4 cup of shredded coconut

- 1/2 cup of monk fruit

 

METHOD

 

1. In a blender add the avocado and almond milk and mix.

2. Add the rest of the ingredients and blend until a smooth consistency.

3. Pour the mix in the muffin cups and top of shredded coconut.

4. Freeze for 3-4 hours.
