When I was a little girl I spent most of the time with my uncle, since both of my parents were working. My uncle had a big patio with giant trees, dogs... the dream, at least for me! I have always been a dog lover and a fan of outdoor activities.
I have so many food memories from those times. Probably I was a very picky eater with my mom but that wasn't the case when I was at my uncles... maybe I knew I could get away with my diva attitude with my mom... Or she used to treat we all the time with sweet foods? I don't know. Now at my 20s I'm just realizing this, processed foods are highly hyper-palatable!
Well, one of the biggest memories I have is that one of my twin uncles used to broil beets, sliced them and once they were cooled he added salt and that's it! I used to loved that. Funny thing, I didn't liked them when my mom made it at home... what? I know, I was very spoiled.
So every time I have beets I always go back to those childhood memories, I had a lovely childhood and I couldn't be more grateful for every single memory. Now throughout the years I have been experimenting with different foods, taste and combinations to create fun and delicious recipes using friendly ingredients for my body and probably yours too.
Today I want to share these beautiful Beet Chocolate Fudge Bites, filled with flavor and just the perfect treat, beets and chocolates are high in antioxidants! I'm all about that on my recipes, they feed your body, cells and soul. Besides being high in antioxidants I used grass fed beef gelatin so you get a boost of gut love for the amino acids that gelatin contains.

BEET CHOCOLATE FUDGE BITES (Makes 12 servings)
- 2 cups (250 g)of chopped raw beets
- 4oz. of dark chocolate (I used sugar free)
- 1 cup of full fat coconut milk (canned)
- 4 Tbsp beef gelatin
- 1/2 cup of monk fruit
1. In a small pot broil the beets with some water until the center is soft and tender.
2. In a blender add the wet ingredients and mix until a smooth consistency (exept for the chocolate).
3. Add the monk fruit and beef gelatin and blend again.
4. Pour the mix in 12 silicone muffins cups and top with chopped chocolate.
5. Freeze for 3-4 hours and ENJOY!
