If you are like me, a person who is enjoys having a delicious sweet treat and at the same time low carb then this is perfect for you... A cozy and simple recipe that will satisfy your tastebuds in every level!
After everyday, whether it was a hard, busy, chilled or a nice day it's always good to have a sweet treat. These were simply perfect and super easy to make with ingredients that you probably already have in your pantry.
I made these the other day, a new variation of another recipe I created with the same based ingredients, in here I decided to incorporate nut butter instead of ghee, I use a nut butter made from mixed nuts that made these muffins exceptionally delicious! I'm so happy to be sharing this super easy recipe with you now.

I also want to touch on my latest obsession when it comes to baked goods... COCONUT FLOUR! It's a paleo, nut free and low carb alternative for almond, wheat or any flour, the high fiber content makes this flour the perfect substitute to create a low carb version. Plus it adds a great taste to recipes, I really like it!
Compared to almond flour, coconut flour is cheaper and it's more efficient in recipes, meaning that you'll need less quantity of flour for the recipe. But also, you'll notice that coconut flour absorbs more water than other flour so that requires to add more liquid into the recipe.
Another bright side of this recipe is that it's also freezer friendly, you may store them in your freezer, inside a plastic bag or container for up to a month! Talk about convenience!

- 1 cup of coconut flour
- 1/3 cup of granulated monk fruit
- 1tsp of ground cinnamon
- 1 tsp of baking powder
- 1 cup of nut milk
- 1/4 cup of nut butter
- 4 eggs
1. Preheat the oven at 350F.
2. In a mixing bowl add all your dry ingredients, mix well.
3. Add the eggs, nut milk and nut butter and mix until there are no lumps left.
4. Pour your mix in 12 muffin cups.
5. Bake for 20 minutes.
6. Let them cool out and enjoy!
