The secret of this crazy and delicious recipe is greek yogurt! And funny enough this recipe also reminds me of the Mexican classic, Tres Leches. Another moisty and creamy dessert recipe, oh! The ingredients on this recipe are super simple. Keto friendly since each serving contains 5.7g of total carbs and 3.2g of fiber. That makes 2.5g of net carbs.

Vanilla Pudding Muffins

- 2/3 cup of coconut flour
- 1/3 cup of almond flour
- 1/3 cup monk fruit
- 1 of tsp baking powder
- 1 tsp cinnamon
- 3 eggs
- 1/4 cup of coconut butter
- 1/4 cup of ghee
- 2 containers (10.6oz) of greek yogurt
1. Preheat your oven at 350F.
2. Mix all the dry ingredients in a bowl.
4. Add eggs and mix well, then incorporate the melted butters and mix again.
5. Add the greek yogurt and mix again.
6. Pour the mix into twelve silicone muffin cups.
7. Bake for 25 minutes.
