Piña Colada Pitaya Bread

Serves 6-8 slices

Ingredients

Bread

  • 1 cup of coconut flour

  • 1 tsp of baking powder

  • 2/3 of RxSugar alullose (MARIA20 for discount)

  • 1/2 cup of unsweetened coconut milk

  • 2 tsp of vanilla extract

  • 2/3 cup of diced pineapple

  • 2 tbsp of unsweetened coconut

  • 2 (236g) bananas

  • 2/4 cup of diced dragon fruit (pitaya)

Dragon Fruit Glaze

  • 1 cup of powdered alullose

  • 1/4 cup of diced dragon fruit

  • 1 tbsp of unsweetened coconut
     

Instructions

  1. Preheat the oven at 350F.

  2. Mix all the ingredients for the bread and place the batter into a silicone loaf dish.

  3. Add your toppings.

  4. Bake for 40-45 minutes.

  5. Mix the ingredients for the drizzle.

  6. Let it cool down and top with drizzle.

  7. Slice into 6 pieces and enjoy!
