These delicious coconut pomegranate cookies are THICK & CHEWY, gluten free , sugar free and super easy to make using some pecan butter, pomegranete seeds and some shredded coconut to increase the thickness of this and flavor on the recipe. You only need one bowl to prepare this amazing holiday recipe.


These are my iconic Coconut Pomegranate Pecan Cookies, these are just a simple and epic combo that you need to make during all this holiday season baking madness... this is not your regular cookie... this is healthy, moist and vegan while also being gluten-free.

This recipe overall is paleo and gluten-free, low sugar and vegan as well. I used the raw pecan butter with cashews from Artisana Organics and almond flour as a base of this recipe... and of course, some pomegranate seeds and shredded coconut on top.


These vegan and glute free cookies are perfect to make during all the Christmas cookie exchange. The recipe it's easy to make and extremely delicious! It's an unmissable recipe that everyone will love and will also nourish your body... high protein and of course also a great source of antioxidants and some fiber.

Coconut Pomegranate Pecan Cookies

Serves 11 cookies


Ingredients

  • 1 1/2 cup of almond flour

  • 1 tsp of cinnamon

  • 1/3 cup of granulated monkfruit or alullose

  • 1/2 cup of Artisana Organics pecan butter with cashews

  • 3/4 cup of mashed bananas

Toppings

  • 1/4 cup of unsweetened shredded coconut

  • 1/4 cup of pomegranate seeds

Method

  1. Preheat the oven at 350F.

  2. Mix all the ingredients in a bowl.

  3. Make 11 medium sized cookies.

  4. Add the toppings and bake for 18 minutes.

  5. Let it cool down, and enjoy!
