Maria here coming at cha' with another waffle recipe! YAY! The waffle life is so real and GOOD. Now I decided to step of my waffle game with another ricotta waffle recipe but with a nice Mexican twist!
Let it rain monk fruit and cinnamon!
Such a classic and one of my favorite things together! The best thing is that these are keto friendly and free from gluten! Each waffle has a total of 2.2 carbs and they are extremely easy and delicious. Your tastebuds will be so pleased.
So this recipe has been ON REPEAT! No shame, it's good, delicious, easy, nourishing and mess free! Can't ask for more about a recipe. Love it when a recipe requires minimal ingredients and kitchen mess.

Another great thing about this recipe is that it is based on REAL INGREDIENTS. Simple, and nourishing! From the vitamin E that almonds provide to the protein, calcium ricotta cheese offers and healthy omega-3's from the eggs (always get pastured raised! They also taste better).
Simple, minimal ingredient waffles
Ricotta cheese
Almond Flour
Eggs
Cinnamon

The easiest waffles EVER!
Add all the ingredients into a blender and mix well, approximately 20 seconds.
Pour about 1/3 cup of the mix into a mini waffle maker and cook for 4 minutes.
Serve with keto maple syrup, cinnamon and golden monk fruit.
By now I probably already convinced you that this recipe is perfect for those busy mornings! But that is not all, you can also freeze these waffles for later! And add the topping you love and prefer!
Meal prep friendly breakfast!
This recipe is great, since it's super easy to make and makes 9 waffles per batch! Also once they cooled down I froze them inside a plastic container and reheat them a few seconds in the toaster oven, microwave or even in the air fryer!

Ricotta Churro Waffles

Ingredients
Base
2 cups (200g) of ricotta cheese
1/2 cup of almond Flour
4 eggs
1 tsp of cinnamon
1 tsp of baking powder
Toppings
Method
Add all the ingredients into a blender and mix well, approximately 20 seconds.
