Paleo Matcha Cake


Matcha has been on repeat! One of the best trends the food community has shared with the world with no doubt, I know that matcha has a long history and just now the whole world is enjoying this amazing leaf packed with antioxidants.


Besides if I'm completely honest the green color drink is so cute, this day I'm sharing a new recipe for you because I bet you haven't use mayonnaise as an ingredient in baked goods. but YOU NEED TO TRUST ME! It's a game changer and you won't ever notice a difference in the sweetness or taste. Are you willing to give me the opportunity to show you how great it is!?


Let's do some badass delicious Paleo Matcha Square Cakes



INGREDIENTS


- 1/2 cup of coconut flour

- 1/3 cup of mayonnaise (I used avocado oil mayonnaise)

- 2 tsp of vanilla extract

- 2 eggs

- 1/4 almond milk

- 1/3 Lakanko monk fruit sweetner

- 1/2 tsp of baking soda

- 1/4 tsp sea salt

- 2 Tbsp of matcha


METHOD


Preheat the oven at 350F.

Mix all the ingredients in a bowl, first all the dry ones, then the wet ingredients. Pour the mix in a greased 8x8 baking dish and bake for 22 minutes.

Let cool and enjoy!
