Ingredients

  • 1 1/4 cups rolled oats

  • 4 scoops Marigold Collagen Peptides in Strawberry Sundae

  • 1/4 cup crushed freeze-dried strawberries

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1/2 cup granulated monk fruit

  • 1/4 tsp baking salt

  • 2 whole eggs

  • 3 tbsp almond milk

  • 1 cup cottage cheese

  • 1 tsp vanilla extract

Pistachio Frosting:

  • 1/2 block organic cream cheese

  • 1 cup powdered monk fruit

  • 4 tbsp pistachio butter

  • 1 tsp vanilla extract

  • Chopped pistachios and freeze-dried strawberries for topping


Instructions

  1. Preheat your oven to 350°F (175°C).

  2. In a blender, combine all muffin ingredients except for the freeze-dried strawberries. Blend for 45 seconds until smooth.

  3. Gently mix in the freeze-dried strawberries, then pour the batter into 9 silicone muffin cups.

  4. Bake in the oven for 22-24 minutes or until a toothpick inserted comes out clean.
