S’mores Protein Cookie Bars

Serves 6-8


  • Ingredients

  • Cookie Base:

    • 1 1/2 cups low carb flour

    • 2 scoops vanilla protein powder

    • 1/2 tsp sea salt

    • 1 tsp baking soda

    • 1 tsp baking powder

    • 1/4 cup brown granulated monk fruit

    • 1/2 cup granulated monk fruit

    • 1 tbsp vanilla extract

    • 3/4 cup nut butter

    • 2 whole eggs

    • 2 tbsp unsweetened almond milk

    • 1/4 cup sugar-free chocolate chips

    Marshmallow Topping:


Instructions

  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, whisk together all dry ingredients until well combined.

  3. Add the nut butter, eggs, vanilla extract, and almond milk to the dry mix, stirring until smooth. Fold in the chocolate chips.

  4. Press about three-quarters of the cookie dough into an 8x8 baking dish.

  5. Layer melted chocolate on top, followed by the Crisp Power protein pretzels, then the marshmallows. Finally, spread the remaining cookie dough over the top.

  6. Bake for 22-24 minutes, covering with foil if necessary to prevent the marshmallows from burning.

  7. Remove from the oven, add additional marshmallows and chocolate chips, allowing them to melt. Let cool completely before slicing into 9 bars.
