Carrot Cake Chia Bars


Okey, first of all hello there! Hope every one is having a great week so far, mine.. let's say kind of crazy but a few of AMAZING things happened. It's my final week of the semester so you can already imagine the craziness, earlier this week my to do list included one report of an article, two exam, a report of a dialysis procedure, a presentation and a final case with diet.


It's mostly done but my prayers worked! One of my exams and one report got cancelled! How great is that, definitely my shoulders are feeling a lot more lighter after those to news. That also meant more time to play in the kitchen!


Today I'm bringing to you another recipe, vegan, gluten free and paleo


-2 cups of gourmet mixed nuts (soaked 15 minutes)

-1/4 of soaked chia seeds in water (I used Mamma Chia)

-1/3 cup of raw honey

-1/4 cup of cassava flour

.

Preheat the oven 350F. Process the soaked nuts until you get a smooth texture. Add the honey and the flour, process again. Then add the soaked chia but mix with a spoon. Pour the mix in a 8x8 baking dish and bake for 40 min. Let cool and enjoy!
