Creamy Coconut Almond Popsicles (Vegan, Low Carb, Gluten Free)


Summer is here! Dresses, shorts, swimsuits and sandals out for some fun! I can't wait to dive into a pool, specially if you live in a very hot weather area like me (desert, oh snap!). This summer may not sound as fun for me because I decided to complete my hours of social work mandatory to graduate plus take a summer class.


Even though I may not be in the beach or by the pool enjoying the water and sunshine, my soul will be there with one of this VEGAN, GLUTEN FREE and LOW CARB popsicles! Made with all natural ingredients plus a good addition of probiotics from the Biohm Organic Super Green Mix which also added a special flavor to the recipe!

INGREDIENTS

- 1 cup of unsweetened almond milk

- 1/2 cup of coconut milk

- 1/4 cup of almond butter

- 2 Tbsp of Mamma Chia chia seeds soaked in water

- 2 Tbsp of monk fruit Lakanto

- Cinammon

METHOD

In a blender put the milks and the super green powder, cinammon, almond butter and monkfruit. Then add the soaked chias and mix with a spoon. Pour in popsicles molds or cups with a stick and freeze for 3 hours. ENJOY!
