Cereal Cheesecake Popsicles (Using Magic Spoon Cereal: Keto & Gluten Free)


Summer calls for all the refreshing recipes, that's for sure! And the temperatures here have been crazy that popsicles needed to happen as soon and possible. I got a new silicone popsicle mold container at the perfect timing so popsicles will be on repeat...


In this occasion, I combined two of my favorite things: Magic Spoon Cereal and Cheesecake. And let me tell you, these are absolutely epic, you gotta get your hands on this recipe; save it, pin it, bookmark it and share it!



What to expect from them?

A low carb, keto friendly and at the same time indulgent summer recipe. Every popsicle only has 35 calories (I know, CRAZY!), only using four ingredients to create this amazing recipe, totally fail proof! And great to have in stock for these summer days.

And of course, Magic Spoon as a main star of this recipe. My fave for so many reasons including; taste, flavor, quality, ingredients and how easy it is to use on many recipes! Such a fun and great version of the sugary cereals we all grew up eating.



These pops are also extremely easy to make, you just only need your blender. Just to make sure to get rid of any cottage cheese chunks, that will also be a source of calcium for this recipe. I you are not into cottage cheese you can also use vegan ricotta cheese or ricotta cheese. Even greek yogurt will do the job!


The key of the cheese is to add that creamy factor!


This recipe was inspired by my friend Sarah Bond, the creator of Live Eat Learn and author of For the Love of Popsicles. Her cookbook has 75 different recipes, perfect for summer, some of those recipes are:

This recipe had a little twist from her Milk and Cereal recipe from her cookbook. Pops that we enjoyed in a warm afternoon, with the perfect creamy touch of the cottage cheese and the crunch of Magic Spoon Cereal.

Cereal Cheesecake Popsicles

Ingredients

Method

  1. In silicone eight popsicle containers add the cereal.

  2. In a blender mix almond milk, cottage cheese and granulated monk fruit.

  3. Pour the mix into each popsicle container with cereal.

  4. Add the sticks and freeze for overnight or at least a few hours.

  5. ENJOY!
