We are showing some love to all my pudding and lemon desserts enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just using some Simply Delish Sugar-Free Lemon Pudding (PURELYHL for discount), greek yogurt, unsweetened almond milk and lemons.

Key Ingredients:

Keeping it extra delicious, magical and just epic by using some brown granulated monk fruit for the perfect brulee, and to make it even healthier we are using RxSugar alullose as our sweetener, if you want to make it sweetener, I didn't add extra sweeteners, it was just right.

Feel free to to use your favorite low carb sweetener, I used RxSugar alullose (MARIA20 for discount) but I also love using alullose or stevia for my baked goods; always a staple in my baking pantry for sure, and essential for healthier desserts.

Protein Lemon Mousse Recipe

Serves 6-8


  • 1pack Simply Delish Sugar-Free Lemon Pudding (PURELYHL for discount)

  • 3/4 cup of vanilla greek yogurt

  • 1/4 cup of unsweetened almond milk

  • 4-3 lemons

Optional Toppings

  • Brown Granulated Monk Fruit


  1. Slice the lemons in half and carefully remove the flesh, set these aside.

  2. In a large bowl add the greek yogurt, unsweetened almond milk and squeeze one half of the lemons.

  3. Beat all the ingredients for the pudding for 3-5 minutes.

  4. Stuff the lemon shells with the mix and refrigerate for at least 40 minutes.

  5. Top with brown granulated monk fruit and caramelize with a kitchen torch.

  6. Enjoy!
