These bars don't require an introduction, to me telling you how good they are... these are AMAZING and with all the color and chocolate vibes! Such a great combination of flavors and textures in these cookies and healthier "M&M's" cheesecake bars with that touch of vanilla is just another level; sugar free, high protein and using better for you ingredients.


For this recipe I’m using amazing and fun ingredients such as Nuzest pea protein, Prozis Chocodots with no sugar added and of course, also some keto cookies. A thematic and fun sugar free recipe that everyone can prepare at home.

We are showing some love to all my cookie monsters, including myself... a childhood classic we all love! But with that I also wanted to include a twist, a healthy and still delicious twist by just adding some Prozis Chocodots no sugar added colorful chocolate.

Rainbow Cookie “Cheesecake” Bars

Ingredients

“Cheesecake Layer”

Toppings

Method

  1. Preheat the oven at 350F.

  2. Mix all the ingredients for the base and place it in a 8x8 silicone baking dish.

  3. Bake for 18 minutes.

  4. Mix all the ingredients for the “cheesecake” and pour over the baked and cooled base.

  5. Add your toppings and freeze a couple of hours. Cut into 9 pieces and enjoy!
