This is a GOOD recipe everyone! Healthy twinkies? Hello, yes please! This idea was inspired by my childhood memory, Submarinos. This is how Twinkies are called in Mexico, plus I has some ricotta cheese and some strawberries... these were just meant to be!
Bringing old memories back, the keto style! These are low in net carbs but high in delicious flavors. The ingredients are also super basic, some of them you already have in your low carb, paleo pantry.
Ingredients
Coconut flour
Almond flour
Eggs
Vanilla Ghee
Ricotta Cheese
Strawberries
As you may notice, yes! The ingredients are super basic and healthier than the original recipe! This is free from inflammatory ingredients such as wheat, sugar, corn syrup, corn oil, soy oil among other artificial flavors and colors in the original twinkies (YIKES).
Eating healthy to a next level!
There's no need to sacrifice a good recipe and good taste when it comes to baking with simpler and cleaner ingredients. The prove is right here guys! Real ingredients and nutrient dense ingredients for the win on this recipe.
I'm also aware that twinkies are usually vanilla filling but these are mostly inspired by Submarinos, the Mexican version of Twinkies. If my memory is right they offer three flavors: vanilla, chocolate and strawberry. My favorite one? Well you know.
Plus I have some strawberries that I froze during the summer. These were used to make the creamy filling along with some ricotta cheese.
Making the filling
In a bowl I added the ricotta cheese and unfrozen strawberries, then with a immersion blender I created the soft mix for the filling.
The assemble
For baking the cake I used a baking dish of 8x8. Once it baked and cooled down cut it in half.
Add the filling into one of the sections and top with the other half.
Freeze.
Super easy and uncomplicated! Way easier than stuffing a piece of bread if you ask me. Just trying to make things easier and uncomplicated. Comfort food with a simple method, that will allow anyone to make this and make your healthy lifestyle sustainable.

Here's a pro tip! If you want your dough to be extra fluffy, just like the dough of twinkies use cream of tartar! This is natural and it's used to make baked goods lighter and fluffier!

Strawberry Keto Twinkies

Serves 8
Ingredients
Cake:
3/4 cup of coconut flour
1/4 cup of almond flour
1/3 cup of granulated monk fruit (PURELYHL for discount)
1 tsp of baking powder
1/4 tsp of cinnamon
1/2 tsp of cream or tartar (optional)
4 eggs
1/4 cup of vanilla ghee
1/4 cup of water
Filling:
2 cups (250g) of ricotta cheese (or almond based ricotta cheese)
1/4 cup of granulated monk fruit
1/2 cup of chopped strawberries
Method
Preheat the oven at 350.
Mix the dry ingredients for the cake.
Add eggs and melted ghee.
Mix well. Add water.
Pour the mix into a 8x8 baking dish. (greased or with waxed paper).
Bake for 24 minutes.
Let it cool.
Cut the cake in half.
In a blender or immersion blender mix all the ingredients for the filling and top on half of the cake with the mix.
Use the other half to top the filling.
Freeze or serve.
