Sweet Potato Baked Tacos with Kimchi Slaw

Serves 4-8


Ingredients

For the Tacos:

  • 1 large sweet potato

  • 2 teaspoons garlic powder

  • 2 teaspoons taco seasoning

  • 1/2 teaspoon sea salt

  • 1/2 cup drained corn

  • 1/2 cup cooked black beans

  • 6-8 corn tortillas

  • Avocado oil spray

For the Sauerkraut Slaw:

  • 1½ cups Eden Foods Sauerkraut Kimchi Slaw

  • 1 teaspoon taco seasoning

  • 1/2 cup dairy-free yogurt alternative

  • 1/4 cup chopped cilantro

Garnish:

  • 1 tablespoon sesame seeds

  • 1 tablespoon dried green onions


Instructions

  1. Preheat the oven to 450F.

  2. Wash, peel and chop your sweet potato. Place it on a baking tray, spray with avocado cooking oil and sprinkle sea salt, 1 tsp of taco seasoning and 1 tsp of garlic powder.

  3. Bake for 13 minutes.

  4. In a bowl mix the ingredients for the slaw and set side.

  5. In a large bowl mix the cooked sweet potato with the rest of the taco seasoning and garlic. Stir well.

  6. Heat the corn tortillas in a microwave for 30 seconds or in a hot skillet 10 seconds per side.

  7. Top your tortillas with sweet potato mix, kimchi slaw, sesame seeds and dried green onions. Enjoy!
