Birthday Cake Muffins (Keto, Gluten Free)


So guys, I gotta be honest. These were originally made in Mother's Day because as a food blogger I get the most of every celebration to make a new recipe testing. I was totally winging it with this recipe and my only option for the celebration.

Don't worry, if this was a complete fail I could always pull an old recipe from the blog since my mom genuinely likes me recipes, and she is not saying that because her love is unconditional, she can get very tough with some of her comments about my baking, recipes and life situations.


But who else would be that honest and realistic that our own mothers, right?


Even though she is not a big or creative cook she has taught me a few tricks, glad that I'm the one who surprises her in the kitchen. Specially when it comes to keto goods. Yes, she is part of the keto gang!



Even she has inspired some of my other recipes such as:


All of that inspiration comes from her good taste on food, she even taught me the classic recipe of Key Lime Carlota, or Key Lime Biscuit Pies with galletas María. A Mexican classic. That woman does have a good taste on food and she is my sugar and salt meter. She can sense very quickly when a recipe is too sweet, has a weird aftertaste, too much cinnamon or salt. That's why she is also my favorite food judge.



Okay, but this recipe was a win! And glad it was because of course, the secret ingredient has love, and a pinch of anxiety about my future. Don't worry, it was mostly love... I promise they are insane!


And please take it easy on my beginner skills on using a piping bag to decorate the cupcakes, of muffins. Practice makes the master, right?


This recipe is simple, delicious and perfect to celebrate ANYTHING! Not just birthday and as the Mad Hater would say, HAVE A MERRY UNBIRTHDAY! Such an iconic character and a great example. Why wait to celebrate and have a birthday cake (in this case, muffin) when every day we've got a reason to celebrate?

Okay, so let's talk about this recipe, what's in it?!


- Coconut Flour

- Eggs

- Cream of Tartar... hold your horses!

- Keto Creamer

- Organic Cream Cheese

- Vanilla Extract

- Low Carb Chocolate Chips

- Low Carb Sprinkles



Pretty basic, if you are into paleo but not into dairy feel free to replace the regular cream cheese to almond based cream cheese, it does also taste amazing and personally it's my favorite pick but I had some regular cream cheese on the fridge.



Cream of Tartar, what the..?


Okay, so this is an organic acid that it's naturally made from natural plant processes or wine making. This is used with the purpose of its leavening agent on baked goods. Basically it makes these muffins extra fluffy! Optional? Totally! But it adds a very special softness to them



These muffins are fully and truly keto! Each muffin has ONLY 2.3 GRAMS OF NET CARBS! That's the beauty of coconut flour; a great source of fiber AKA nutrients for our healthy gut and makes recipes low in net carbs!


As what goes for sweetener you already may now my drill already, granulated monk fruit. The brand I use is Lakanto, because my code makes everything cheaper, use: PURELYHL for discount!


Toppings, low carb chocolate chips, also from Lakanto and the sprinkles were from The Sprinkle Company, I get these from Etsy and they are amazing, made from erythritol and so cute!

Birthday Cake Muffins

Serves 12

Ingredients

  • 1 cup of coconut flour

  • 1/3 cup of granulated monk fruit (PURELYHL for discount)

  • 1 tsp of baking powder

  • 1/2 tsp of cinnamon

  • 1/2 tsp of cream of tartar

  • 4 eggs

  • 1/2 cup of water

Topping

  • 8 oz of cream cheese (organic pastured raised, preferred)

  • 1/2 cup of granulated monk fruit

  • 1 tsp of vanilla extract

  • 1/4 cup of low carb chocolate chips

Method

  1. Preheat the oven at 350F.

  2. Mix the dry ingredients for the cupcakes.

  3. Add the eggs, creamer and water.

  4. Pour the mix into 12 silicone muffins cups.

  5. Bake for 24 minutes and let them cool.

  6. In the meantime prepare the cream cheese topping.

  7. Mix the cream cheese, vanilla and granulated monk fruit with a hand mixer.

  8. Top carefully with a piping bag or a knife.

  9. Top with chocolate chips and sprinkles.

  10. Serve and enjoy!
