Ingredients

For the oats:

  • 1/2 cup oats

  • 1 package of Seed Boost in Sesame & Chia

  • 1 teaspoon cinnamon

  • A dash of nutmeg

  • 3 tablespoons granulated monk fruit

  • 1 cup nut milk

  • 1 teaspoon vanilla extract

Sticky Toffee Topping:


Instructions

  1. Soak the dates in water and microwave for 2 minutes until soft. Let sit for 5 minutes, then drain.

  2. Blend the soaked dates with half of the protein bar, vanilla extract, sea salt, and almond milk until smooth. Set aside.

  3. Combine oats, cinnamon, nutmeg, monk fruit, and vanilla in a bowl. Pour in nut milk and microwave for 1.5 minutes, stir, then microwave for another minute.

  4. Spread the date toffee topping over the oats, garnish with pecans and shredded coconut, and enjoy!
