Tiramisu Brownies

Serves 9-16
Ingredients
Dry Ingredients:
1 cup Dilettoso Choc-O-Lotta Amore Baking Mix
1 tbsp instant coffee
1 tsp baking soda
1 tsp baking powder
½ tsp sea salt
1 tbsp vanilla extract
⅔ cup organic sour cream
1 organic egg
Lady Finger Layer:
1 cup brewed coffee
10-12 lady finger cookies
Cream Layer:
1 cup ricotta cheese (or mascarpone)
2 tbsp cornstarch
½ cup monk fruit sweetener
2 tsp vanilla extract
Topping:
½ cup cacao powder
Instructions
Preheat your oven to 350°F.
In a bowl, combine the dry ingredients, then mix in wet ingredients until smooth. Pour batter into an 8x8 silicone baking dish.
Bake for 22-25 minutes until edges are set. Let cool.
Blend together ricotta, cornstarch, monk fruit, and vanilla to make the cream layer.
Dip lady fingers into brewed coffee, then layer over cooled brownies.
Spread the ricotta mixture on top and dust with cacao powder.
