We are showing some love to all my french toast and blueberry cheesecake enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just adding the laughing cow cheese and a touch of sugar-free syrup, and also, Royo Low Carb sliced bread.

Blueberry Basil Cheesecake French Toast

Serves 2 serving


  • 4 pieces of Royo Low Carb Artisan Bread

  • 1/3 cup of egg whites

  • 1/3 cup of unsweetened almond milk

  • 1 tsp of vanilla extract

  • 1 tsp cinnamon

  • 1/2 cup of RxSugar alullose


  • 1 cup of fresh blueberries

  • 2 pieces of the laughing cow cheese

  • 6 leaved of fresh basil

  • 1/2 cup of RxSugar Syrup


  1. Mix all the egg whites, almond milk, vanilla and cinnamon in a bowl.

  2. Soak each bread into the mix and cook for 2-3 minutes each side.

  3. Repeat with all the mix left.

  4. Let them cool down and add your toppings.
