Use your cheese wraps to make this cheesy and amazing omelette! This is such a fun, easy and delicious recipe to make for breakfast, lunch or even dinner! Made with simple and healthy ingredients; gluten-free, keto and high-protein.

You only need one skillet, so double win for a mess free and delicious healthy recipe! One of the best parts of this recipe is that it's made with simple ingredients and it just takes a few steps to make! Using my favorite ingredients; My current obsession, cheddar cheese wraps and roasted poblanos. The ultimate comfort breakfast.

About this Cheddar Cheese Poblano Omelette:

We are showing some love to all my breakfast enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just using some cheddar cheese wrap and roasted poblano peppers.

Key Ingredients:

Keeping it extra delicious, healthy and just epic by using some cheddar cheese and poblano peppers, and to make it even more satisfying I added some shredded chicken, more protein and flavor. The ultimate loaded omelette you need to try now! And of course, also some vegetables from the pico de gallo and cilantro.

You won't see cheese wraps and omelettes another way from now on! This is simply perfect for meal prep since they just require a few ingredients as well as minimal steps to make these little buns, great for lunch or breakfast!

The base of this Cheddar Cheese Poblano Omelette:

The base is made with simple ingredients, a cheddar cheese wrap (I used Folios), some roasted poblano that luckily my grocery store offers already roasted, I removed the seeds and washed it. For extra protein I added some shredded chicken too.

The good thing about organic eggs is that these tend to be higher in nutrients, plus chickens are usually treated better and humanly. This is something I like to think when I go to grocery shopping, to also support eco friendly and more human companies.

  • Roasted Poblano Pepper

  • Taco Seasoning

  • Cilantro

This omelette is so loaded and packed with protein that kept me full for a long time, plus the the benefits of low carb and protein rich recipe is that will keep your glucose levels at bay.. such an egg-cellent recipe! Easy, cheesy and with a kick or chile poblano!

I enjoyed mine over a bed of lettuce... I mean AESTHETIC! Haha, but that's completely optional... also, since I am a spicy food lover I included some sauce on top. So for breakfast, lunch or post workout this is a great tasty option.

Cheddar Cheese Poblano Omelette

Serves 1 serving


  • 1 cheddar cheese wrap

  • 1/2 cup of egg whites (seasoned with taco seasoning)

  • 1 half of a roasted poblano pepper

  • 1/4 cup of pico de gallo

  • 1/4 cup of shredded chicken

  • Cilantro for garnish


  1. Heat a skillet with a touch of butter.

  2. Place the cheese wrap in medium heat and let it toast for 1 minute.

  3. Pour over the egg whites and add the poblano pepper on a side with the chicken and pico de Gallo (leave some for topping).

  4. Cover and let it cook for 3-4 minutes in low heat.

  5. Carefully fold the omelette and serve with pico de Gallo and cilantro.
