Cherries & bananas... in a protein bread! One of the best parts of this recipe is that it's extremely easy to make, it's basically mix, pour, bake and done... extremely easy! This banana bread is just the perfect dessert or snack without all those tons of sugars our bodies don't need.

To add that extra magical factor of this recipe I also included some cinnamon, such a game changer! Amps up the flavor of the banana and the whey protein.

Adding some black cardamom, cinnamon and of course, banana and cherries. I have been also obsessed with this ingredient, it adds volume, creaminess and you can add collagen protein to every recipe too to make them extra nourishing!

In this occasion I used also some vanilla whey protein to add more flavor and a delicious bakery style touch to this recipe, one of my latest obsessions that goes perfect in this recipe. These are simply great for meal prep, no need to bake anything at all to enjoy and attack that sweet tooth at any moment.


I mixed it with some cinnamon, stevia to add a little but more of flavor and unique touch to the mix of the already iconic cherry banana and cardamom combination.

Cherry Cardamom Banana Protein Bread

Serves 6 large pieces


Ingredients

  • 3/4 cup of coconut flour

  • 1/2 cup of vanilla whey protein

  • 1/4 cup of stevia or monk fruit

  • 1 tsp of cinnamon

  • 1 tsp of baking powder

  • 1/2 tsp of black cardamom

  • 4 eggs

  • 2 bananas

  • 1 tsp of vanilla extract

  • 1 cup of cherries

  • 1/2 cup of unsweetened almond milk

  • 1/2 cup of almonds


Method

  1. Preheat the oven at 350F.

  2. Measure all your dry ingredients using your scale and place them into a mixing bowl.

  3. Add the wet ingredients, cherries, bananas and chop the almonds, add them to the mix and stir well. Save some cherries and almonds for topping.

  4. Transfer to a silicone baking loaf dish.

  5. Top with leftover almonds and cherries.

  6. Bake for 35 minutes, let them cool down and enjoy!
