We are showing some love to all my french toast casserole and cookies and cream enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just adding the gluten-free oreos, and also, Canyon Bakehouse Gluten-Free Burger Buns.

Keeping it extra delicious, healthy and just epic by using some Sundays creme sandwich cookies, and to make it even healthier we are using RxSugar alullose as our sweetener and of course some of these fantastic Canyon Bakehouse Gluten-Free Burger Buns. The base is made with simple ingredients, some keto friendly oreos (used Sundays) and to keep things sweet some RxSugar alullose, and for the bread I have been loving these Canyon Bakehouse Gluten-Free Burger Buns. The perfect texture for this french toast casserole.

Feel free to to use your favorite low carb sweetener, I used RxSugar alullose (MARIA20 for discount) but I also love using abullone or stevia for my baked goods; always a staple in my baking pantry for sure, and essential for healthier desserts.

Okay, from now on it will be hard for me to eat leftover burger bread another way! These are super easy to make and just super yummy, plus good for you. I have been trying to increase some protein and this is a great breakfast and even dessert, I have been enjoying if as my post-workout too.

The cookies and cream mix is magical, plus you can sprinkle some of the white cookie center on top for major yumminess... and a great companion to a creamy latte! You'll love these!

Cookies & Cream French Toast Casserole

Serves 1-2 serving


  • 2 pieces of Canyon Bakehouse Gluten-Free Burger Buns

  • 1/2 cup of egg whites

  • 1/2 cup of unsweetened almond milk

  • 1 tsp of vanilla extract

  • 1/2 cup of RxSugar alullose

  • 1 gluten-free oreo cookie


  • 1 gluten-free oreo cookie


  1. Preheat the oven at 350F.

  2. Mix all the unsweetened almond milk, egg whites, alullose and vanilla extract.

  3. Cut the bread into cubes.

  4. Add the bread to the mix and let it soak, transfer to a baking dish.

  5. Add the toppings

  6. Bake for 25 minutes.

  7. Let them cool, top with maple keto syrup and enjoy!
