We are showing some love to all my croissants and any holiday baking enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just adding some dates, pecans, coconut and a touch of cranberries, and of course, crescent roll dough.

Keeping it extra delicious, healthy and just epic by using some pears for the pretty pop of color and nutrients, and to make it even healthier we are using RxSugar alullose as our sweetener, some dates, cranberries, coconut, bananas, cinnamon, and of course some baked organic crescent rolls. A great healthy recipe without sacrificing great taste!

The base is made with simple ingredients, some cranberries, bananas, pecans, coconut, and to keep things sweet some D'Vash Dates, and for the croissants, I baked some organic crescent rolls. The perfect texture flaky and buttery flavor.


Feel free to to use your favorite low carb sweetener, I used RxSugar alullose (MARIA20 for discount) but I also love using alullose or stevia for my baked goods; always a staple in my baking pantry for sure, and essential for healthier desserts.

Okay, from now on it will be hard for me to eat crescent rolls another way! These are super easy to make and just super yummy, plus good for you. I have been trying to increase some antioxidants in my diet so the cranberries and pecans here hits the spot for that amazing color and nourishment.

Perfect Keto Pancake Mix

 

Cranberry Date & Nut Crescent Rolls

Serves 1 serving


Ingredients

  • 1 container of organic crescent roll dough

  • 8 D'vash dates

  • 1 banana

  • 1 tsp of cinnamon

  • 1/2 tbsp of cornstarch

  • 1 tsp of vanilla extract

  • 3 tbsp of finely chopped pecans

  • 1/4 cup of unsweetened shredded coconut

  • 1/4 cup of cranberries

  • 2 tbsp of D'vash date sugar


Method

  1. Preheat the oven at 350F.

  2. Remove the seeds from the dates, place them in a bowl and cover in water, add 1/2 tsp of cinnamon and microwave for 2 minutes.

  3. Drain all the excess water.

  4. Microwave for 1:30 minutes the banana and mix in with the dates along with vanilla extract and rest of cinnamon. Add cornstarch if desired, but helps with thickness.

  5. Mix in the coconut and pecans.

  6. Spread part of the date mix on top of each crescent triangle.

  7. Roll carefully from the larger part to the shorter part.

  8. Place them in a baking tray, sprinkle date sugar.

  9. Bake for 13-15 minutes, they should look golden and crispy.

  10. Let them cool down and enjoy!
