Guys, meet your latte new best friend. This high protein, gluten free, vegan and low carb cranberry vegan carrot loaf, moist and perfect to soak or dip into your lattes or milk. This is a simple recipe that it's just so hard to resist... got my boyfriend as testimony, and my own tastebuds!


You only need one bowl, so double win for a mess free and delicious healthy recipe! One of the best parts of this recipe is that it's made with simple ingredients and it just takes a few steps to make! Using my favorite ingredients; My current obsession, Culina vegan coconut yogurt, Nuttzo gingerbread nut butter and of course, some cranberries and carrots as well.


About this Cranberry Vegan Carrot Cake Bread:

We are showing some love to all my carror cake some love, cranberry and baking enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just adding some gingerbread nut butter from Nuttzo for that Christmas magic, also some keto candied peans along with some low carb white chocolate.



Key Ingredients:

Keeping it extra delicious, healthy and just epic by adding some keto candied pecans, and to make it even healthier we are using Nuttzo gingerbread nut butter and some Culina vegan coconut yogurt. A great healthy recipe without sacrificing great taste!



Fuffly bread with a nice touch of pecans chunks in the white chocolate! This is simply perfect for meal prep since they just require a few ingredients as well as minimal steps to make these little loaves, also ready yo attack that sweet tooth at any moment.



The base of this Cranberry Vegan Carrot Cake Bread:

The base is made with simple ingredients, some Nuzest Vanilla Pea Protein (PURELYHL for discount) to add volume and to fuel up those muscles, some pecans, cranberries, carrots, spices, and Nuttzo gingerbread nut butter and also some Culina vegan coconut yogurt.


The good thing about the ingredients that we are using, the protein powder, nut btter, yogurt and the rest are all vegan friendly and just made with the simplest ingredients... made with no artificial colors, flavors as well or being free from corn syrups, hyronated oils and bleached flours.

Soft and flavorful! The bread is moist, soft and flavorful. The chunks of pecans and the chocolate chips on the bread along with the carrot cake with the crnaberries it's just a great and delicious experience for your tastebuds in a nourishing way.


Perfect to pair with a cozy cup of your favorite nut or regular milk, or a latte. Super cozy and you can even air fry it for a few minutes to make it even crispier! Slice it and freeze it for you to enjoy for later as well!

Cranberry Vegan Carrot Cake Bread

Serves 6-12 servings


Ingredients

For the cake

  • 1 cup of vegan protein pancake mix

  • 1/2 cup of granulated monk fruit

  • 1 tsp of baking powder

  • 1 tsp of cinnamon

  • 1/2 tsp of ginger

  • 1/16 tsp of clove

  • 1/4 cup of Nuttzo gingerbread nut butter

  • 1 cup of carrot shredded

  • 1/4 cup of water

  • 1 small container of Culina Vegan Bourbon Vanilla Coconut Yogurt

  • 2 tbsp of keto candied pecans

  • 1/4 cup of cranberries

Toppings

  • 2 tbsp of keto candied pecans

  • 1/4 cup of cranberries

  • 2 tbsp of low carb white chocolate chips

  • 1 small container of Culina Vegan Sour Cherry Almond Coconut Yogurt


Instructions

  1. Preheat the oven at 350F.

  2. Mix all the dry ingredients for the bread, then mix well the wet ingredients.

  3. Transfer the batter to a silicone baking dish.

  4. Bake for 35 minutes, let it cool down.

  5. Add the toppings, slice and enjoy!
