We are showing some love to all my cottage cheese and eclairs enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just adding the cottage cheese and a touch of mixed berries to add volume and a nice vanilla flavor Nuzest Vanilla Pea Protein (PURELYHL for discount).

The base is made with simple ingredients, Hero Bread Low Carb Hot Dog Buns, mixed berries and to keep things sweet some RxSugar alullose, and of course, some Nuzest Vanilla Pea Protein (PURELYHL for discount) for extra creaminess on the cottage cheese blend.


Feel free to to use your favorite low carb sweetener, I used RxSugar alullose (MARIA20 for discount) but I also love using abullone or stevia for my baked goods; always a staple in my baking pantry for sure, and essential for healthier desserts.

I have been trying to increase some fiber in my diet so the mixed berries here and the high fiber Hero Bread hits the spot to improve digestion as well.

Ingredients

  • 1 Low Carb Hot Dog Bun (used Hero Bread)

  • 1 cup of cottage cheese

  • 1 scoop of Nuzest Vanilla Pea Protein (PURELYHL for discount)

  • 1 tsp of vanilla extract

  • 1/4 cup of RxSugar alullose (MARIA20 for discount)

  • 1/3 cup of mixed berries

Instructions

  1. Blend the cottage cheese with vanilla extract and pea protein.

  2. Fill the hot dog bun with the whipped cottage cheese and top with berries.

  3. Enjoy!
