But with that I also wanted to include my personal, an extra healthy but still delicious twist by just adding the a sugar-free glaze and caramel and a touch of laughing cow cheese, and also, Royo Low Carb Artisan Bread.

Gingerbread Cheesecake Pudding Bread with Salted Caramel Glaze

Serves 2 serving


Ingredients

  • 4 slices of Royo Low Carb Artisan Bread

  • 1/3 cup of egg whites

  • 1/3 cup of unsweetened almond milk

  • 2 tbsp of RxSugar Sugar-Free Maple Syrup

  • 1/2 tsp of ginger

  • 1 tsp of cinnamon

  • 1/4 tsp of Diamond Crystal Baking Salt

  • 1 tsp of vanilla extract

  • 1 piece of the laughing cow cheese

Sugar Free Maple Glaze

  • 1/4 cup of powdered monk fruit

  • 1 tbsp of cashew butter

  • 2 tbsp of of RxSugar Sugar-Free Maple Syrup

  • A pinch of Diamond Crystal Sea Salt Flakes

Method

  1. Preheat the oven at 350F.

  2. Mix all the unsweetened almond milk, maple syrup, ginger, baking salt, cinnamon, egg whites and vanilla extract.

  3. Cut the bread into squares.

  4. Add the bread to the mix and let it soak, transfer to a small baking dish.

  5. Bake for 15-18 minutes.

  6. Mix the ingredients for the glaze.

  7. Let the bread pudding cool, top with sugar-free glaze and enjoy!
