We are showing some love to all my bread pudding and gingerbread enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just adding the a sugar-free glaze and caramel and a touch of laughing cow cheese, and also, Royo Low Carb Artisan Bread.

Feel free to to use your favorite low carb sweetener, I used RxSugar alullose (MARIA20 for discount) but I also love using alullose or stevia for my baked goods; always a staple in my baking pantry for sure, and essential for healthier desserts.

Gingerbread Cheesecake Pudding Bread with Salted Caramel Glaze

Serves 2 serving
Ingredients
Sugar Free Maple Glaze
1/4 cup of powdered monk fruit
1 tbsp of cashew butter
2 tbsp of of RxSugar Sugar-Free Maple Syrup
A pinch of Diamond Crystal Sea Salt Flakes
Method
Preheat the oven at 350F.
Mix all the unsweetened almond milk, maple syrup, ginger, baking salt, cinnamon, egg whites and vanilla extract.
Cut the bread into squares.
Add the bread to the mix and let it soak, transfer to a small baking dish.
Bake for 15-18 minutes.
Mix the ingredients for the glaze.
Let the bread pudding cool, top with sugar-free glaze and enjoy!
