We are showing some love to all my strawberry and "Oreo" and banana split fans... a classic we all love! But with that I also wanted to include a twist, a healthy and still delicious twist by just adding some Mad Minis vanilla ice cream sandwiches and some greek yogurt that I will add that thickness factor while keeping things low carb and delicious!


This recipe is easy, quick and nutrient dense... also so fun!


Key Ingredients:

Adding some low sugar and epic ice cream sandwich cookies from my faves, Mad Minis for to create those layers. I have been also obsessed with greek yogurt on recipes, the ingredients are simple, low carb and gluten free... plus the taste is just delicious.


And the base, high protein and low carb thanks to the use of greek yogurt, a staple in my fridge that goes beyond just being a snack.



A fluffy low carb base, a creamy vanilla greek yogurt filling with some cookie ice cream sandwiches to divide the layers... the dream team! These are simply perfect for meal prep, no need to bake anything at all to enjoy and attack that sweet tooth at any moment. "Oreo" Banana Split Icebox Cake

Serves 6 servings


Ingredients

Method

  1. Add one layer of cookie sandwiches in a silicone baking loaf.

  2. Top with a layer of greek yogurt, bananas and strawberries.

  3. Repeat this step with the rest of the ingredients.

  4. Freeze overnight.

  5. Slice into 6 pieces and enjoy!
