2 large apples, washed and dried
Filling:
2/3 cup plain Greek yogurt
4 scoops vanilla protein powder
1 packet Simply Delish Vanilla Sugar-Free Pudding mix
2/3 cup freeze-dried strawberries, crushed into small pieces
Toppings:
1 cup sugar-free white chocolate, melted (see notes)
Valentine’s Day sprinkles or crushed freeze-dried strawberries for garnish
Instructions
Core and slice apples into approximately 1/4" rounds. Insert popsicle or craft sticks through the bottom of each slice for handles. Pat slices dry.
Combine Greek yogurt, vanilla protein, pudding mix, and crushed freeze-dried strawberries in a bowl; mix until a thick, scoopable filling forms. Adjust texture with a teaspoon of yogurt if needed.
Press a small scoop of filling onto each apple slice, smoothing to cover the surface evenly.
