Papaya Caramel Bread (Paleo, Keto, Gluten Free)


Okay, I think that banana bread has been getting a lot of popularity lately. Yes, it does have a great smell. Taste, is also good... I will not deny that. But wait till you try this Papaya Bread! Sounds a bit crazy but trust me, THIS. IS GOOD.


Papaya, a very tropical fruit and that just as banana tress, they also grow in the same type of weather. My grandma has some papaya and banana trees in her house and that's amazing! That place is just amazing, she grows all sorts of vitamin C rich foods such as; lemons, limes, grapefruits, oranges, tangerines, guavas, chiles, papayas, avocados and bananas.


Actually I found my love for papaya one time I has in her house! With a papaya smoothie, it changed my mind and opened my mind to a whole new world (dramatic? me? nah!). But know if my turn to change this up.


BYE BANANA BREAD, HELLO PAPAYA BREAD!


This amazing fruit has loads of goods inside, it's a source of vitamin C as I mentioned and it also known for the digestive properties. It turns out that papayas a a source protelitic enzymes, such as papain and chymopapain, these have an antiviral, antifungal and antibacterial properties.


In this recipe we are sticking to the basics of banana bread, simple ingredients! We are using all paleo friendly and low carb ingredients in this recipe. And instead of banana, well, we are using papaya. Once it's in a pureed consistency it works just as banana.


Some other ingredients inside this recipe includes:

  • Coconut Flour

  • Granulated Monk Fruit

  • Eggs

  • Ghee or Coconut Oil

  • Coffee Creamer

  • Dark Chocolate

  • Pecans

  • Papaya

Super basic, and for the caramel I used Vanilla Ghee from Gold Nugget Ghee and Vital Proteins Cacao Caramel Latte, two scoops. Perfect addition of gut nutrients (amino acids from Vital Proteins Collagen) and healthy fatty acids from the ghee. Also easier to digest!


To keep things sweet I used granulated monk fruit as my sweetener. The old classic that never fails and my personal favorite, use code PURELYHL for Lakanto's discount. This applies to all products on their website.

Papaya Caramel Bread

Serves 12


Ingredients

  • 1 cup of coconut flour

  • 2 scoops of cacao caramel latte collagen (optional)

  • 1/3 cup of granulated monk fruit

  • 1 tsp of cream of tartar (optional)

  • 1 tsp of baking powder

  • 1 cup fo pureed papaya

  • 1/2 cup of water or nut milk

  • 2 eggs

  • 1/4 cup of vanilla ghee or coconut oil

Toppings

  • 1 or 30g small chocolate bar (low carb)

  • 1/4 cup of pecans


Method

  1. Preheat the oven at 350F.

  2. In a bowl mix all the dry ingredients.

  3. In a blender add all the wet ingredients and blend until you have no lumps left.

  4. Incorporate the wet mix with the dry ingredients and mix well.

  5. Pour the mix into a greased or covered loaf pan.

  6. Top with crushed pecans and chocolate.

  7. Bake for 40 minutes.

  8. Let cool and enjoy!
