We are showing some love to all my french toast casserole and piña colada enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just adding the white chocolate chips and pitaya, and also, Royo Low Carb Challah Buns.

The base is made with simple ingredients, some white chocolate, pineapple, pitaya and to keep things sweet some RxSugar alullose, and for the bread I have been loving these Royo Low Carb Challah Buns. The perfect texture for this french toast casserole.


Feel free to to use your favorite low carb sweetener, I used RxSugar alullose (MARIA20 for discount) but I also love using abullone or stevia for my baked goods; always a staple in my baking pantry for sure, and essential for healthier desserts.

Okay, from now on it will be hard for me to eat challah bread another way! These are super easy to make and just super yummy, plus good for you. I have been trying to increase some antioxidants in my diet so the dragon fruit here hits the spot for that amazing color and nourishment.

White Chocolate Challah French Toast Casserole

Serves 4 serving


Ingredients

  • 3 pieces of Royo Low Carb Challah Buns

  • 1/2 cup of egg whites

  • 1/2 cup of unsweetened almond milk

  • 1 tsp of vanilla extract

  • 1/2 cup of RxSugar alullose

  • 2 tbsp of melted sugar free white chocolate chips

Toppings

  • 1 tbsp of sugar-free white chocolate chips

  • 1 tbsp of shredded coconut

  • 1 cup of pineapple

  • 1/4 cup of frozen pitaya or dragon fruit

Method

  1. Preheat the oven at 350F.

  2. Mix all the unsweetened almond milk, egg whites, alullose and vanilla extract.

  3. Cut the bread into cubes.

  4. Add the bread to the mix and let it soak, transfer to a baking dish.

  5. Add the toppings

  6. Bake for 25 minutes.

  7. Let them cool, top with maple keto syrup and enjoy!
