Feel free to to use your favorite low carb sweetener, I used RxSugar Sugar-Free Maple Syrup (MARIA20 for discount) but I also love using alullose or stevia for my baked goods; always a staple in my baking pantry for sure, and essential for healthier desserts.

Pumpkin Cheesecake French Toast Roll-Ups

Serves 1 serving
Ingredients
Glaze
1/4 cup of powdered monk fruit
1/2 tsp of cinnamon
2 tsp of unsweetened almond milk
Method
Mix all the unsweetened almond milk, egg whites, cinnamon and sugar-free maple syrup.
Cut the edges of the bread and roll it up with a rolling pin.
Add part of the pumpkin, cheese and a touch of alullose on top to each bread.
Roll them carefully.
Soak the roll-up in the mix, transfer to your air fryer or baking dish.
Bake for 8 minutes at 350F. Ary fry for 4 minutes at 380F.
Mix the ingredients for the glaze.
Let them cool, top with sugar-free glaze and enjoy!
