We are showing some love to all my goat cheese and cheesecake enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just adding the goat cheese and a touch of raspberries to add volume and a nice touch along with a creamy elderberry cheesecake filling.

Keeping it extra delicious, healthy and just epic by using some elderberry for the purple natural color, and to make it even healthier we are using RxSugar alullose as our sweetener, some yogurt and of course some of these fantastic Canyon Bakehouse Gluten-Free Sweet Brioche Stye buns. Feel free to to use your favorite low carb sweetener, I used RxSugar alullose (MARIA20 for discount) but I also love using abullone or stevia for my baked goods; always a staple in my baking pantry for sure, and essential for healthier desserts.

Okay, from now on it will be hard for me to eat sweet rolls another way! These are super easy to make and just super yummy, plus good for you. I have been trying to increase some antioxidants in my diet so the raspberries here hits the spot for that amazing color and nourishment.


The cheesecake filling with the toasted bun after air frying it (you can also bake it) it makes these even better and more magical... and a great companion to a creamy latte! You'll love these!

Perfect Keto Pancake Mix

 

Raspberry Goat Cheesecake Stuffed Brioche

Serves 4 serving


Ingredients

  • 1/4 cup of organic yogurt

  • 2 tbsp of goat cheese

  • 1 tsp of vanilla extract

  • 2 tbsp of egg whites

  • 4 tbsp of RxSugar alullose

  • 4 Canyon Bakehouse Gluten-Free Sweet Brioche Stye buns

  • 1/2 cup of raspberries

Method

  1. Preheat the oven at 350F.

  2. Mix all the yogurt, egg whites, yogurt, alullose and vanilla extract.

  3. Cut a hole to the brioche bun carefully.

  4. Stuff them with the cheesecake mix and bake for 18 minutes. Or ayr fry for 9 minutes at 355F.

  5. Let them cool and enjoy!
