Using my favorite ingredients; My current obsession cilantro, potatoes (can't get enough) and taco sauce.

We are showing some love to all my grilling and potato enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just adding the taco sauce, jalapeños and making an easy cilantro cream.

Keeping it extra delicious, healthy and just epic by using some red onions, and colorful bell peppers for the pretty pop of color and flavor, and to make it even healthier we are using some roasted jalapeños, ranch seasoning, and of course some of these fantastic Melissa's Baby Dutch Yellow Potatoes. A great healthy recipe without sacrificing great taste!

The base is made with simple ingredients, some baby dutch yellow potatoes, jalapeños, ranch seasoning, and of course, taco sauce to season the vegetables before grilling or baking this delicious and healthier recipe for your family.


Feel free to use your favorite type of potato, but you I highly recommend using Melissa's Baby Dutch Yellow Potatoes because these are seriously so buttery and great for grilling or baking!

Taco Potato Skewers with Cilantro Cream

Serves 4 serving


Ingredients

  • 300 g of Melissa's Baby Dutch Yellow Potatoes

  • 1 red onion

  • 1 bell pepper

  • 2 jalapeños

  • 1 tsp of garlic

  • 1/4 tsp of sea salt

  • 1/8 tsp of black pepper

  • 1 tbsp of ranch seasoning

  • 2 tsp of taco sauce

Cilantro Cream

  • 1 cup of cottage cheese (or 1 block of soft tofu)

  • 1 tsp of garlic

  • 1/4 tsp of sea salt

  • 1/8 tsp of black pepper

  • 1 tsp of ranch seasoning

  • 1/3 cup of chopped cilantro


Method

  1. Preheat the oven or grill at 350F.

  2. Wash the vegetables and cut them into 1x1 inch pieces.

  3. Add the seasonings and sauce.

  4. Stack one ingredient at the time in your skewers.

  5. Grill or bake for 35 minutes.

  6. Blend all the ingredients for the sauce and serve the skewers with it.

  7. Enjoy!
