So this happened, a two ingredient gnocchi recipe coming at you! This has been a recipe I wanted to recreate my own style; gluten free, low carb and still flavorful, and if you are like me then you would love this simple recipe!
Date night or solo night this is a perfect recipe no matter the skills levels because it's easier than pie and as delicious as any comfort food ever! There's something about Italian food that just makes it perfect to hit that sweet spot and comfortness.

These will blow your mind, for real! Who would have thought that you could make a simple gnocchi recipe made from minimal simple ingredients will keeping it low carb? This is just a great hack to eat some homemade pasta.
I know that this is now an actual gnocchi, but this was inspired by the traditional gnocchi that's made from potato, flour and ricotta. I say that this recipe was inspired since we are skipping the potato and we are switching from wheat flour to almond flour and keeping the ricotta cheese.
Keeping it easy, gluten free and low carb! Just a great way to enjoy an Italian dinner that you can make from scratch! How fancy does it sound? There's nothing like cooking a home cooked meal from scratch for yourself of the people you love!

The ingredients are super basic as you can see, all of them available at any supermarket or probably you already got in your pantry! Here I also played with spices; I really enjoy adding herbs such as dried parsley to add a little of a personal touch and flavor.
You can even add some collagen powder to add some gut health too!
Meal prep? This is a great recipe to pair your favorite protein, I liked the idea of pairing this with salmon but chicken, shrimp, pork chops and even a delicious juicy steak will work perfectly for this amazing side dish!

Two Ingredient Gnocchi

Serves 4 servings
Ingredients
1 cup of almond flour
1 + 1/4 cup of ricotta cheese
1/4 tsp of real salt
1/8 tsp of garlic powder
1/8 tsp of black pepper
Method
Mix or process all the ingredients until fully blended.
Create little balls with it and place them in a baking tray.
Bake for 8-12 minutes..
Serve with sauce or with fresh tomatoes and enjoy!
