We are showing some love to all my french toast casserole and fig enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just adding the white chocolate chips, and also, Canyon Bakehouse Gluten-Free Sub Rolls.

The end result
Okay, from now on it will be hard for me to eat leftover sub rolls another way! These are super easy to make and just super yummy, plus good for you. I have been trying to increase some protein and this is a great breakfast and even dessert, I have been enjoying if as my post-workout too.

White Chocolate Pistachio Fig French Toast Casserole

Serves 1-2 serving
Ingredients
2 pieces of Canyon Bakehouse Gluten-Free Sub Rolls
1/3 cup of egg whites
1/3 cup of unsweetened almond milk
1 tsp of vanilla extract
1/2 cup of RxSugar alullose
1 tsp of cinnamon
Toppings
4 sliced fresh figs
1 tbsp of sugar-free white chocolate chips
1/2 tbsp of crushed pistachios
Instructions
Preheat the oven at 350F.
Mix all the unsweetened almond milk, egg whites, alullose and vanilla extract.
Cut the bread into cubes.
Add the bread to the mix and let it soak, transfer to a baking dish.
Add your toppings. Bake for 20 minutes.
