Almond Pumpkin Blondies (Paleo & Low Carb)


When friends ask me, "I you could live in any era... what would it be?" the answer is easy! THIS ONE! I love all the new technology, the new ideas and movements and I feel like we are somehow getting back to our roots in the wellness community! And overall the world, we are trying to eat healthier, we are seeing new food alternatives and technologies that have the main purpose of reducing waste.


Of course not everything is sunshines and rainbows but it's all about perspective as I like to say. We are a little world and by changing our mindset we can change other people, smiles are contagious, energy is vibrant! Let's make a good change!





As a foodie one of my favorite things about this era is the food of course! We have a huge variety of products that fit every personality, taste and lifestyle! Vegan cheese? done!... Paleo tortillas? done!... Keto baked goods? done!


We, as human beings we have a brilliant mind! We are so creative and authentic and this brings up so many good things in us if we use it correctly of course.



One of my favorite companies is Glean, they have a variety selection of flours... but now just any flours of course! They have vegetable based flours such as:


- Beets

- Sweet Potato

- Pumpkin

- Cauliflower




Guess a paleo or gluten free diet ever sounded so fun, right? And today I'm so happy to share this delicious experiment using PUMPKIN FLOUR!

- Paleo/Gluten Free

 

Paleo Pumpkin Flour Almond Bites


INGREDIENTS (12 servings)


- 3/4 cup of creamy almond butter

- 1/3 cup of pumpkin flour (or almond flour)

- 3 Tbsp of beef gelatin

- 1/4 cup of almond milk

- 1/3 cup of monk fruit

- 1 tsp of baking soda

- 1 tsp of cinnamon


METHOD


1. Preheat the oven at 350F. In a mixing bowl add the pumpkin flour, monk fruit, beef gelatin, cinnamon and baking soda.

2. Add the dripping almond butter and warm almond milk into the bowl and mix.

3. Pour the mix in 12 even muffin cups and bake for 20 minutes.

4. Let them cool and ENJOY!
