Strawberry Crunch Protein Buttermilk Donuts

Serves 10 donuts


Ingredients

  • 1 cup pecan flour

  • 1/2 cup of vanilla pea protein (used Nuzest)

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1/4 cup of crushed freeze dried strawberries

  • 2 scoops of Marigold Strawberry Sundae Grass-Fed Whey Protein (PHL for discount)

  • 1 teaspoon vanilla extract

  • 1 large egg

  • 1/3 cup of buttermilk

  • 1/3 cup of vanilla greek yogurt

  • 1 tbsp of melted butter

Frosting and Topping:  

  • 1 cup of powdered monk fruit

  • 3 tbsp of coconut milk

Toppings

  • 4 crushed strawberry cookies (used Fancypants)

  • 2 tbsp of freeze dried strawberries


Instructions 

  1. Preheat your oven to 350°F (175°C) and lightly grease your donut mold.

  2. Mix dry ingredients: baking powder, baking soda, protein powder, and almond flour in a bowl.

  3. Add in the wet ingredients and stir in the freeze dried strawberries.

  4. Pour the batter into the donut mold, filling each cavity one-third full.

  5. Bake for about 18-20 minutes, or until a toothpick inserted in the center comes out clean.

  6. Mix the ingredients for the frosting.

  7. Let the donuts cool, then decorate with frosting and toppings. Enjoy!
