Albacore Tuna Fajita Muffins (Paleo, Whole 30)


Hello and good day for everyone! So the semester has begun and I'm not the only one in the same situation. School is busy and stressful! I get it! I see my environment, the student life is pretty much on-the-go, hectic and messy. It's very common to see people buying from the vending machines or stopping by the fast food restaurant.



After a few weeks of stress and bad food to your body you'll probably notice that your body is screaming you to eat some greens and as a student is very important to stay sharp and nourishing since our brains are getting a lot of information and we are non stop since the morning till the afternoon.

Cooking? Who has time for that?!


But guess what! You don't have to cook everyday. Just meal prep some delicious foods to have throughout the week. This weekend I wanted to experiment with some Albacore Wild Tuna, a very easy and delicious recipe that they feed your body for several reasons.


- High Protein

- Healthy Fatty Acids

- Micro nutrients

Albacore Tuna Fajita Muffins

Serves 14

INGREDIENTS

  • 4 cans of Wild Foods Albacore Wild Tuna

  • 2 tbsp of chopped jalapeño

  • 1/4 cup of chopped onion

  • 1/2 cup of chopped bell pepper

  • 1/4 cup of chopped cilantro

  • 3 eggs

  • 3 Tbsp of almond flour

  • Sea salt

  • Black pepper

  • Chipotle powder

METHOD

  1. Preheat the oven at 350F.

  2. In a mixing bowl add the tuna, veggies and mix.

  3. Add the seasonings and almond flour. Mix again.

  4. Add the eggs, mix and divide the mix in 14 muffin linens.

  5. Bake for 25 minutes.

  6. ENJOY!
