Chocolate Orange Muffins (Keto, Paleo, MCT)
Coming at cha' with a new recipe that's going to be perfect for those veggie picky eaters since we are sneaking in some zucchini in these muffins. Trust me, you won't even tell that we added it in the ingredients.
If you struggle with picky eaters, I get it... 100%. My cousins are picky eaters, my dad is the pickiest eater of all times! Specially, SPECIALLY when it comes to healthy foods. The secret of dealing with those picky eaters is to keep the secret ingredient to yourself.
My dad is that type of person who sticks to one brand, and that's the only brand he "loves". As easy as giving him a similar drink, in a different glass is enough for him to say: "Oh, I think they changed the formula, it's better now." But guess what, he was drinking a different brand the whole time. How naive... HA!
It's the exact same thing about healthy foods! You don't have to tell them it's sugar free, paleo, vegan or whatever's the secret of that recipe.
For example, in this recipe we are sneaking in some zucchini and some MCT... People would unrecognized MCT and immediately will set themselves in the mindset of negation. When n reality these doesn't add any flavor at all! But they do add some benefits!
MCT stand for Medium Chain Triglycerides.The special thing about this fatty acids is that it's easier to absorb, and be used ad energy! These are great for:
- Boost the ketone production while fasting or being in ketosis.
- Source of fats for those who struggle digesting fats or have their gallbladder removed.
These can also be considered sugar-free, but honestly I don't like that term because some people use it in the incorrect term. For example, a recipe labeled by sugar free when in reality they use honey, dates or some sort of natural sweetener as sugar replacement... that's still sugar!
In this recipe I use monk fruit, which is also a sugar replacement. But the difference in the glycemic impact; monk fruit doesn't raise your glucose levels and it doesn't have the same effect on the liver as other sugars do!
The monk fruit I use is this one from Lakanto and it's pretty amazing! It doesn't leave you with a weird after taste and it's keto-friendly!
Now, let's talk real quick about the recipe, we are not using artificial flavorings or orange juice, instead we are using just a few drops of orange essential oil! This is great because it has high concentrations of flavor without using a lot of it. Plus it's so aromatic! Once you finish baking these your house will be smelling so nice!
These muffins are also keto friendly, paleo and gluten free. Per serving there's only 5.7g grams of total carbs and 3.5g of fiber! We are not using wheat or grains in this recipe, just almond and coconut flour, my two faves when it comes to baking... specially low carb baking, which is what I am all about!

Chocolate Orange Muffins

- 1/2 cup of almond flour
- 1/2 cup of coconut
- 1/3 cup of monk fruit (PURELYHL for discount)
- 2 scoops MCT cacao powder or 2 tbsp of cacao powder
- 2 drops of orange essential oil
- (200g) of shredded zucchini
- 3 tbsp of ghee
- 2 eggs
- 1/4 cup (28g) of low carb chocolate chips (PURELYHL for discount)
1. Preheat your oven 350F.
2. Mix all dry ingredients in a bowl except for the chocolate chips.
3. Add the liquid ingredients.
4. Pour the mix into twelve silicone muffin cups.
5. Top with chocolate chips.
6. Bake 25 minutes.
