Tomatillo Baked Chicken (Keto, Paleo, Whole 30)

Hello everyone! I really hope you are having a great day so far, for me it has been a very nice month so far, lots of special visitors including some of my best friends and my sister! So as a good Mexican, food is always something that's involved when it comes to creating a special bond, so a cozy healthy dinner had to happen.


In this occasion I used some of my homemade green salsa recipe and added some other ingredients to create a cozy simple chicken bake. A touch of my Mexican heritage into a one skillet dinner.



I love one skillet meals because they also leave me with more time to enjoy some self-care, enjoy the company of my family and friends and less time to clean (because nobody like to clean, agreed?)



This simple recipe will be perfect for anyone! Even if they are following any of these types of lifestyles:


  • Paleo

  • Whole 30

  • Low Carb

  • Keto

  • Grain Free

  • Dairy Free

  • Egg Free


The key ingredients on creating non-dairy creamy recipes is cauliflower, coconut milk or/and almond milk. Cashews are also so useful but they can be expensive and they require over-night soaking. In today's recipe my creamy ingredients were: cauliflower and almond milk.



It's amazing how a good sauce and using the right ingredients can create a fantastic and comforting recipe even if you are doing a whole 30 or trying to reduce dairy. Something that I always tell my clients is that it's about using better ingredients and knowing about some kitchen hacks.



In this recipe, it can be optional the use of Xantan Gum, the use of this in the food industry is to stabilize recipes, in this case it can be used for the cream, to make it thicker too! It's not essential but it improves the presentation.



Simple, clean ingredient dinner!

  • Chicken Breast

  • Almond Milk

  • Cauliflower

  • Green Salsa

  • Seasonings

  • Cilantro


As a result you'll have a crowd pleaser recipe, specially for those who love Mexican food! This honestly is a great recipe to enjoy on a weekend, when the family is gathered around because as I said before it's super easy to prepare and the method is very simple!



Easy Peasy Recipe!

  1. Preheat the oven at 350F.

  2. Put the chicken into a baking dish and add salt and black pepper.

  3. In a bowl mix the green salsa with some almond milk and mix well.

  4. Pour the mix into the chicken and bake for 45 minutes.

Can you store this in the freezer?

Actually YES! It can be a freezer friendly recipe and ready to heat in the oven at 350F for 15-10 minutes once it's defrosted (if not, leave it for 30 minutes) or until you can see the green sauce it's completely melted.



How to serve this recipe

You can serve this recipe with veggies, all the rainbow of veggies! In this occasion I used some roasted veggies but you can also use fresh veggies or steamed veggies. Cauliflower rice to mix with the sauce is also a great idea and very Mexican like!

Tomatillo Baked Chicken

Serves 2


Ingredients

  • 4 chicken breasts

  • 1 cup green salsa

  • 1/2 cup of unsweetened almond milk

  • 1 cup of cauliflower (steamed)

  • 1 tbsp of onion chips (or powder)

  • 1 tsp of Sea Salt

  • 1/4 tsp of Black Pepper


Method

  1. Preheat the oven at 350F.

  2. Put the chicken into a baking dish and add salt and black pepper.

  3. In a bowl mix the green salsa with some almond milk and mix well.

  4. Pour the mix into the chicken and bake for 45 minutes.

  5. Let it cool and ENJOY!
